Step-by-Step Instructions

Follow each step to make the recipe successfully.

  1. Soak Boondi

Place 3/4 cup boondi in a bowl and add enough warm water to submerge it. Press the boondi down with a spoon to ensure it's fully soaked. Set aside for a few minutes to soften.

  2. Strain Curd

Place a sieve over a mixing bowl. Add 1 cup of fresh curd to the sieve and press it with a spoon to strain, ensuring a smooth and lump-free texture. Add 1/4 cup of water to the sieve and strain again to get all the curd through. Mix the strained curd until smooth.

  3. Combine Boondi and Curd

Drain the soaked boondi and gently squeeze out any excess water. Add the softened boondi to the strained yogurt. Mix well to combine.

  4. Adjust Consistency

If the raita appears too thick for your preference, add an additional 1/4 cup of water and mix until the desired liquid consistency is achieved.

  5. Add Spices and Herbs

Add 1/4 teaspoon black salt, 1/4 teaspoon black pepper powder, 1/2 teaspoon roasted cumin powder, and 1/2 teaspoon white salt (or to taste) to the boondi-curd mixture. Add some chopped fresh coriander. Mix all ingredients thoroughly until well combined.

  6. Prepare Tadka

Heat 1/2 teaspoon ghee in a small tadka pan over a medium flame. Once the ghee is hot, add 1/2 teaspoon cumin seeds. Turn off the flame as soon as the cumin seeds start to splutter. Add a pinch of asafoetida (hing) to the hot ghee. Remove the pan from the flame and let the tadka cool slightly for a few moments.

  7. Add Tadka and Infuse Flavors

Pour the slightly cooled tadka over the prepared boondi raita. Immediately cover the bowl with a plate for a few minutes to allow the aromatic flavors of the tadka to infuse deeply into the raita.

  8. Mix and Garnish

Remove the plate and gently mix the tadka into the raita. Garnish the boondi raita with fried dry red chilies and additional chopped fresh coriander. Serve chilled.
