Follow each step to make the recipe successfully.
Wash and wipe the capsicum thoroughly. Make a vertical slit in each capsicum, ensuring not to cut all the way through. Remove excess seeds if necessary.
In a mortar and pestle, crush 2 green chilies, a small piece of ginger, and 3-4 garlic cloves until a coarse paste is formed.
In a mixer grinder, add 1/4 cup roasted peanuts, 1/4 cup farsan (or sev), and 2 teaspoons of white sesame seeds. Grind them coarsely, ensuring not to make a fine powder.
Transfer the coarsely ground mixture to a bowl. Add the crushed green chili-ginger-garlic paste, 1/2 teaspoon carom seeds, 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/2 teaspoon red chili powder, 1/4 teaspoon turmeric powder, a little amchur powder (or lemon juice), salt to taste, 2 tablespoons of oil, and fresh coriander leaves. Mix all ingredients thoroughly until well combined.
Carefully fill each slit capsicum with the prepared stuffing mixture. Ensure the stuffing is packed well into the capsicum.
Heat a little oil in a pan on low flame. Place the stuffed capsicum in the pan. Cover with a lid and cook for until one side is lightly golden.
Remove the lid and carefully flip each capsicum to cook on the other side. Continue cooking until all sides are tender and golden brown.
Sprinkle any remaining stuffing mixture over the cooked capsicum in the pan. Cover the pan with the lid again and let it for another on low heat. Turn off the gas and let the capsicum rest in the covered pan for to absorb the flavors.
