Add 2 cups of cake flour, 1/2 teaspoon of salt, 1/2 teaspoon of baking powder, and 1 tablespoon of sugar to a bowl. Mix these dry ingredients together until well incorporated.
Pour 1 tablespoon of melted butter ghee into the dry mixture. Mix by hand until the mixture resembles bread crumbs.
Add 1 cup of full cream yogurt to the mixture and mix to form a soft dough. Add a little extra yogurt if needed until the dough is soft and pliable.
Cover the dough with plastic wrap and place it in the refrigerator for about to rest.
After , remove the puri dough from the refrigerator. Roll out the dough on a floured work surface to about half a centimeter thick.
Use a mug or a circular cutter to cut the rolled-out dough into circular shapes. This recipe yields about 30 round puris.
Take a large pan and add cooking oil, filling it about halfway through. Heat the oil on medium heat until it's hot but not smoking. The oil is at the right temperature when small bubbles form around the puri when added.
Carefully place the cut puris into the hot oil. As they fry, gently press down on them with a slotted spoon and throw some hot oil over the top to help them puff up. Fry until golden brown on both sides.
Once fried, remove the puris from the oil and place them into a container lined with kitchen paper towels to drain any excess oil.
To serve, take one puri, place a fried piece of patha over it, and then top with another puri to create a slider. Arrange these on a serving platter. Garnish with lemon wedges and fresh green mint leaves for added flavor and color.
