Follow each step to make the recipe successfully.

  1. Prepare the Batter

    In a bowl, add 1 cup (50g) of besan. Gradually add water, mixing continuously to form a thin batter. The total water used should be about 1.5 cups. Add 1/2 tsp chili flakes and 1/2 tsp salt (or to taste) and mix well.

  2. Add Vegetables to Batter

    Add 1 tbsp each of finely chopped capsicum, carrot, tomato, onion, green chili, grated ginger, and chopped coriander leaves to the batter. Mix all the vegetables and spices into the batter until well combined. If the batter seems too thick, add a little more water to achieve a thin consistency.

  3. Prepare Bread Slices

    Take 2 bread slices and cut each into two triangles.

  4. Arrange Bread and Pour Batter

    Heat a tawa (griddle) and apply some butter. Arrange the four bread triangles on the tawa, leaving a cross-shaped gap in the center. Pour the prepared batter into the center gap and around the bread slices, ensuring it spreads evenly to form a circular shape around the bread. Use a spatula to gently set the circle and clean the edges.

  5. Cook the Omelette

    Cover the tawa with a lid and cook on low flame for , until the top surface of the omelette is dry. Remove the lid. Apply butter on the top surface of the omelette and on the bread slices. Carefully flip the omelette to cook the other side. Apply more butter on this side. Cook on low flame until golden brown. Flip it again to ensure even cooking and a nice golden color on both sides.

  6. Add Cheese and Paneer

    Place the triangle-cut cheese slices on top of the bread sections of the omelette. Sprinkle oregano and black pepper over the cheese. Add grated paneer on top of the cheese (this step is optional but adds to health and taste).

  7. Fold and Serve

    Carefully fold the omelette over the bread, creating two triangular pockets. Cut the large omelette into two halves. Serve hot with your favorite sauce or chutney.
