Take two bread slices. Place them on a hot tawa (griddle). Spread butter generously on one side of each slice. Flip the slices and spread butter on the other side as well. Cook on low flame, turning them over occasionally, until both sides are golden brown and crispy.
In a mixing bowl, add 60g paneer cubes, 1 small cubed onion, and 1 small cubed green capsicum. Add salt to taste, 1/4 tsp Kashmiri red chilli powder, a pinch of turmeric powder, a pinch of black pepper powder, and a pinch of dry mango powder. Add 1 tbsp curd and 1 tsp mustard oil. Mix all the ingredients well until the paneer and vegetables are evenly coated with the spices and curd. Add chopped fresh coriander leaves and mix.
Place a pan or kadai on the flame. Add 1/2 tsp mustard oil and let it heat up. Once the oil is hot, add the prepared paneer mixture to the pan. Cook the mixture on full flame for , stirring continuously, until the vegetables are slightly tender-crisp and the paneer is lightly cooked. Turn off the flame.
Place the well-roasted bread slices on a cutting board. Evenly spread the hot paneer tikka topping over each bread slice. Garnish with cheese strips, chilli flakes, and oregano as desired. You can cut the open sandwiches into triangles or squares before serving. Serve immediately.
