Follow each step to make the recipe successfully.
Wash and peel 500 grams of potatoes. Cut them into halves (or quarters, or use small whole potatoes). Prick each potato piece slightly with a knife so they can fry thoroughly inside.

Once the roasted spices have cooled down, coarsely grind them in a grinder. Ensure it's a coarse grind, not a fine powder.
Check the potatoes again. They should be golden and about 90% cooked, easily cut with a spatula.
Add the coarsely ground spice mix to the potatoes and mix well.
Add 1/2 teaspoon of turmeric powder and mix thoroughly to coat the potatoes evenly.
Add 1/2 teaspoon kalonji (nigella seeds, optional), 1/2 teaspoon amchoor powder, 1/2 teaspoon black salt, and 1/2 teaspoon Kashmiri red chili powder. Mix all the spices well with the potatoes.
Add 2 pinches of asafoetida (hing) and mix again.
Cover the pan and cook on low flame for a few more minutes to allow the flavors to meld.
Uncover the pan and stir the potatoes. Ensure they are fully cooked and tender.
Add 1 tablespoon of water and mix well. This helps all the spices to coat the potatoes evenly.
Cover and cook on low flame for another minute.
Uncover the pan, stir the potatoes, and garnish with fresh coriander. Turn off the flame and serve hot.
