Step-by-Step Instructions

  1. 1.Prepare Mango Puree

    Peel and chop one mango into small cubes. Transfer the chopped mango into a grinding jar and blend until a fine, smooth mango puree is formed, ensuring no lumps remain.

  2. 2.Roast Desiccated Coconut

    Place a heavy-bottomed pan on low flame. Add 1 teaspoon of pure ghee. Once the ghee is slightly hot, add 1 cup of desiccated coconut powder. Continuously stir and lightly roast the coconut powder on low flame for about 1 minute until it becomes fragrant. Be careful not to change its color.

  3. 3.Add Milk and Sugar

    Add 1/2 cup of milk to the roasted coconut mixture. Continue stirring on low flame until the coconut powder absorbs all the milk. Then, add 3 teaspoons of sugar (adjust according to the sweetness of your mango and personal preference) and mix well until the sugar melts completely.

  4. 4.Incorporate Mava (or Milk Powder)

    Once the sugar has melted, add 2 tablespoons of mava (khoya) to the mixture. If mava is unavailable, you can use 2 tablespoons of milk powder, or skip this step entirely. Mix the mava thoroughly into the coconut mixture until it is well combined and the mixture starts to dry out. Ensure the flame remains low throughout this process.

  5. 5.Add Mango Puree and Dry the Mixture

    After the coconut mixture has dried and the milk is fully cooked, add the prepared mango puree. Stir continuously on low flame to combine the mango puree with the coconut mixture. Continue stirring and drying the mixture until it thickens and starts to come together, forming a mass that can be rolled into laddus. The mixture will become less sticky and more cohesive.

  6. 6.Cool the Mixture

    Once the mixture reaches the desired consistency and forms a ball, turn off the flame. Continue stirring the mixture for a few more moments due to the residual heat of the pan. Then, spread the mixture evenly in the pan to allow it to cool down completely.

  7. 7.Form Laddus

    Once the mixture has cooled to a comfortable temperature, lightly grease your hands with ghee. Take small portions of the mixture and roll them between your palms to form smooth, round laddus of your desired size. Place the formed laddus on a plate.

  8. 8.Coat and Garnish

    Roll each mango laddu in desiccated coconut powder to coat them evenly. Arrange the coated laddus on a serving plate. For garnishing, place a few pistachio flakes and a dry rose petal on top of each laddu to enhance their appearance.
