In a bowl, combine 2 boiled mashed potatoes, 2 tablespoons of finely chopped capsicum, 2 tablespoons of finely chopped onion, 1/2 tablespoon of black pepper, 1/2 tablespoon of mixed herbs, 1/2 tablespoon of chilli flakes, 1/2 tablespoon of salt, and 1 tablespoon of corn flour. Mix all ingredients well until a uniform dough-like consistency is formed.
Take a portion of the potato mixture and shape it into an elongated cylindrical stick. Repeat for the remaining mixture.
In a separate bowl, mix 2 tablespoons of wheat flour with 1/2 cup of water and 1/4 tablespoon of salt to create a smooth, thin batter. Dip each potato stick into this wheat flour batter, ensuring it's fully coated. Then, roll the battered stick in bread crumbs until completely covered.
Heat oil for deep frying in a pan over medium flame. Carefully place the coated potato sticks into the hot oil. Fry them on medium flame, turning occasionally, until they turn golden brown and crispy on all sides.
Once golden brown, remove the potato sticks from the oil and place them on a paper towel to drain excess oil. Serve hot with your favorite dipping sauces like ketchup or mint chutney.
