In a mixing bowl, add finely chopped tomato pieces (pulp removed), chopped onion, green capsicum, red capsicum, paneer, and boiled sweet corn. Add oregano, black pepper powder, chili flakes (optional), tomato ketchup, and Schezwan chutney (optional). Mix all ingredients well. Grate 2 cheese cubes into the mixture and mix thoroughly. Add 2 pinches of salt (or to taste, considering cheese is salty) and mix again. The stuffing is now ready.
Take one mini bun. Carefully slice off the top part (lid) using a knife. Using the knife, gently hollow out the inside of the bun to create a cavity, being careful not to tear the sides or bottom. Repeat this process for all 6 buns. Keep the removed bun tops (lids) aside with their respective buns. The removed bread from hollowing can be used for breadcrumbs.
Take a prepared bun, remove its lid, and fill the cavity generously with the prepared stuffing, pressing it down well. Cut cheese slices into small squares. Place one small cheese square on top of the stuffing in each bun. Cover each bun with its corresponding lid, pressing it down gently.
Brush all the covered buns with melted butter. Garnish each bun by placing a small piece of green capsicum and a small piece of red capsicum on top of the cheese slice.
Preheat the oven to 180°C. Line a baking dish with butter paper. Brush a little melted butter on the bottom of each bun and arrange them on the baking dish. Bake the buns in the preheated oven at 175°C for 10 minutes, or until the cheese is melted and the buns are golden brown.
Once baked, carefully remove the cheesy mini pizza buns from the oven. Serve hot and enjoy these cheesy, creamy, and crunchy mini pizza buns.
• Remove tomato pulp for a better texture in the stuffing.
• Adjust chili flakes according to your spice preference, or omit if you don't like spice.
• If Schezwan chutney is unavailable, you can use pizza sauce, pasta sauce, or just tomato ketchup.
• Be careful not to tear the bun while hollowing out the cavity.
• The removed bread from hollowing the buns can be used to make breadcrumbs or other recipes.
• For baking on a gas stove, preheat a kadhai on low flame, place a stand inside, and then place the bun plate on the stand. Cover and cook on low flame until the buns are baked and cheese is melted.
• Use normal-sized buns instead of mini buns and adjust the size of chopped vegetables accordingly.
• Feel free to skip any vegetable that is not available or not preferred.
