Add 1 cup of Poha (flattened rice) to a grinder and grind it into a fine powder. Transfer the poha powder to a mixing bowl.
To the poha powder, add 1 boiled mashed potato, 1/2 tbsp salt, 1/2 tbsp black pepper powder, 1 tbsp mixed herbs, and 1/2 tbsp chili flakes. Mix all ingredients thoroughly with your hands until a soft dough forms.

Grease a flat surface (like a chopping board) with a little oil. Take a small portion of the dough and roll it into a long, thin cylindrical shape. Using a knife, cut the cylinder into smaller, finger-sized sticks.
Heat oil in a pan over medium flame. Once the oil is hot, carefully add the shaped poha potato sticks. Fry them on medium flame, turning occasionally, until they turn golden brown and crispy.
Once golden brown, remove the fried sticks from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
