Drumstick and Potato Curry (Aloo Sahjan ki Sabzi)

Ingredients

  • 1 tbspRed chilli powder
  • 1 tbspBlack pepper powder
  • 1 tbspYellow mustard powder
  • 1/2 tbspTurmeric powder
  • 1 tbsp (to taste)Salt

For Tempering

  • 2 tbspOil
  • 1/2 tbspCumin
  • 1/2 tbspMustard
  • 1Bay leaf

Step-by-Step Instructions

  1. 1.Prepare Drumsticks

    Peel the outer fibrous layer of the drumsticks and wash them thoroughly with water. Cut them into approximately 1.5-2 inch pieces.

  2. 2.Prepare Potatoes

    Peel and chop the raw potatoes into medium-sized wedges.

  3. 3.Prepare Spice Paste

    In a small bowl, combine 2 tablespoons of water, 1 tablespoon of coriander powder, 1 tablespoon of red chili powder, 1 tablespoon of black pepper powder, and 1 tablespoon of yellow mustard powder. Mix well to form a smooth paste.

  4. 4.Temper the Oil

    Heat 2 tablespoons of oil in a pan. Add 1/2 tablespoon of cumin seeds and 1/2 tablespoon of mustard seeds. Let them splutter. Then, add 1 bay leaf.

  5. 5.Sauté Onions

    Add 1 chopped medium-sized onion to the pan. Cook for 1 minute on medium flame until the onions become translucent.

  6. 6.Add Ginger Garlic and Potatoes

    Add 1 tablespoon of ginger-garlic paste (crushed or minced) to the pan. Immediately add the chopped raw potatoes.

  7. 7.Season Potatoes

    Add 1/2 tablespoon of turmeric powder and 1 tablespoon of salt (or to taste). Mix all ingredients well to coat the potatoes evenly.

  8. 8.Cook Potatoes

    Cover the pan with a lid and cook for 2 minutes on medium flame, allowing the potatoes to soften slightly.

  9. 9.Add Drumsticks and Spice Paste

    Add the prepared drumstick pieces to the pan. Then, add the previously prepared spice paste. Mix all ingredients thoroughly, ensuring the drumsticks and potatoes are well coated with the spices.

  10. 10.Cook Spices

    Cover the pan and cook for 2 minutes on medium flame, allowing the spices to cook and meld with the vegetables.

  11. 11.Add Tomato Paste

    Add the paste of 2 medium-sized tomatoes to the pan. Mix well with the vegetables and spices.

  12. 12.Cook Tomato Paste

    Cover the pan and cook for another 2 minutes on medium flame, allowing the tomato paste to cook down and integrate with the other ingredients.

  13. 13.Add Water and Simmer

    Pour in enough water to achieve your desired gravy consistency (approximately 1-1.5 cups). Mix well.

  14. 14.Final Simmer

    Cover the pan and cook for 4-5 minutes on low flame until the drumsticks and potatoes are fully cooked and the gravy has thickened slightly.

  15. 15.Serve

    Turn off the flame. The drumstick and potato curry is ready to be served hot with rice or roti.
