No Garlic (fresh)?
Add a little olive oil to a large pot. Over medium heat, add one chopped brown onion and two cloves of crushed garlic. Cook, stirring, for about until the onions are nice and softened.
Add 1 kg of washed, peeled, and chopped potatoes to the pot. Give them a good stir so they get nicely coated with the onion, garlic, and oil. Next, add 1 liter (4 cups) of chicken stock and 2 cups of water. Season with salt and pepper.
Give the mixture a nice stir. Increase the temperature to medium-high, put the lid on, and allow this to come to a boil. Once the soup is boiling, allow it to with the lid slightly off for about , or until the potatoes are nice and tender.
Add 2 cups of frozen peas to the pot. Stir them through and allow them to for a couple of minutes.
Blend the soup until it's nice and smooth. You can blend it in batches by allowing it to cool slightly and transferring it to a regular blender, or use a stick blender directly in the pot.
Before serving, fry up a couple of slices of short-cut bacon in a frypan by itself (no need to add oil) until the bacon is nice, brown, and crisp.
Serve the hot soup in a mug or bowl, scattering the beautiful bacon over the top. Enjoy this beautiful winter warmer!
• You can use vegetable stock or beef stock instead of chicken stock based on your preference.
• If using a regular blender, allow the soup to cool slightly before blending in batches, then reheat.
• The bacon topping is entirely optional but adds a nice crispy texture and saltiness.
• Substitute chicken stock with vegetable or beef stock for a different flavor profile.
• Omit bacon for a vegetarian version.
