In a small bowl, combine 2 tablespoons of brown sugar, 2 teaspoons of curry powder, 2 tablespoons of white vinegar, and 1/3 cup of extra virgin olive oil. Season with salt and pepper to taste.
Mix the dressing ingredients thoroughly until well combined. Add 1/2 cup of sultanas to the dressing and mix again. Cover the bowl with plastic wrap and let it stand for about an hour to allow the sultanas to soak up the flavors.
In a large bowl, add 4 cups of cold, cooked rice. To the rice, add 1 chopped celery stalk, 4 trimmed and chopped spring onions, and 1 chopped red apple (with skin on).
Gently toss the rice, celery, spring onions, and apple together until evenly distributed.
Pour the prepared dressing with the soaked sultanas over the salad mixture. Toss everything together until all ingredients are nicely combined and coated with the dressing. Serve immediately or chill for later.
• Allow the sultanas to soak in the dressing for at least an hour to absorb the flavors fully.
• Use cold, pre-cooked rice for the best texture in the salad.
