  • No Brown sugar?

    • 1 cup white sugar + 1 tbsp molasses
    • Coconut sugar (1:1)
  • No Vinegar (white)?

    • Lemon or lime juice (1:1)
    • Apple cider vinegar (1:1)

Step-by-Step Instructions

Step 1: Prepare the Dressing Base

In a small bowl, combine 2 tablespoons of brown sugar, 2 teaspoons of curry powder, 2 tablespoons of white vinegar, and 1/3 cup of extra virgin olive oil. Season with salt and pepper to taste.

Step 2: Mix and Soak Sultanas

Mix the dressing ingredients thoroughly until well combined. Add 1/2 cup of sultanas to the dressing and mix again. Cover the bowl with plastic wrap and let it stand for about an hour to allow the sultanas to soak up the flavors.

Step 3: Combine Salad Ingredients

In a large bowl, add 4 cups of cold, cooked rice. To the rice, add 1 chopped celery stalk, 4 trimmed and chopped spring onions, and 1 chopped red apple (with skin on).

Step 4: Toss Salad

Gently toss the rice, celery, spring onions, and apple together until evenly distributed.

Step 5: Add Dressing and Serve

Pour the prepared dressing with the soaked sultanas over the salad mixture. Toss everything together until all ingredients are nicely combined and coated with the dressing. Serve immediately or chill for later.

Pro Tips

• Allow the sultanas to soak in the dressing for at least an hour to absorb the flavors fully.

• Use cold, pre-cooked rice for the best texture in the salad.

• This salad is great for meal prepping as it tastes even better the next day.

Variations

• Substitute apples with pineapple for a different fruity twist.

• Add grated carrot or corn for extra vegetables and color.

• Experiment with other dried fruits like raisins or cranberries.
