Follow each step to make the recipe successfully.
In a large bowl, combine carrots, 1-inch long beans, and cauliflower florets. Add salt to taste, ¾ tsp turmeric powder, 2 tsp chili powder, 2 cinnamon sticks, 5 green cardamom pods, 2 tsp shahi jeera, 1 tbsp garlic paste, 1 tbsp ginger paste, ½ tsp mace powder, ½ tsp cardamom powder, 2 slit green chilies, 1 cup mint leaves, and 1½ cup curd. Mix all ingredients thoroughly until the vegetables are well coated. Set aside.
Heat 1 cup of oil in a heavy-bottomed pot. Add 2 cups of sliced onions and fry until they turn golden brown and crispy. This is a critical stage, so watch carefully to prevent burning. Once browned, turn off the gas and strain the fried onions, reserving the flavored oil. Keep the fried onions aside.
In a separate large pan, bring 3 liters of water to a rolling boil. Add 4-5 green cardamom pods, 2 cinnamon sticks, 1 green chili, 2 tbsp salt, and 1 tbsp oil to the boiling water. This will infuse flavor into the rice.
Add 3 tbsp of the reserved fried onion oil back into the pot where the onions were fried. Add the vegetables to the pot and cook on high heat for , stirring occasionally. The vegetables should not be fully cooked at this stage. Turn off the heat and add 1 cup of green peas, mixing gently.
Drain the 3 cups of basmati rice that have been soaking for about . Add 1 tbsp rose water and approximately ½ tbsp kewra water to the boiling rice water (from Step 3). Carefully add the drained rice to the boiling water and cook until the rice is about 80% done. Drain the rice immediately and remove the whole spices (cardamom, cinnamon, green chili) from the rice.
Layer the partially cooked rice evenly over the cooked vegetables in the pot. Drizzle a pinch of saffron (dissolved in 2 tbsp milk), 1 cup of the reserved rice water (from ), and 3 tbsp of the reserved fried onion oil over the rice. Garnish with a handful of fresh mint leaves and a handful of fried onions (barista). Prepare a rope of dough and apply it around the rim of the pot. Moisten the dough with a little water, then place the lid firmly on top, pressing down to create an airtight seal.
Place the sealed pot on high heat for to generate inside. Then, the heat to very low and cook for . For best results and to prevent burning, you can place the biryani pot on a hot tawa (griddle) during the low-heat cooking phase.
After of dum cooking, carefully break the dough seal and remove the lid. Using a thin slotted spoon, gently mix the biryani from the sides, lifting the rice and vegetables to combine them without mashing. Plate the biryani and garnish with fresh mint leaves and coriander. Serve hot.
