Chop 5 (50g each) Mars bars into small chunks. Place them in a heatproof bowl suspended over a pan of barely water (double boiler), ensuring the water and bowl do not come into contact. Add 300ml of cream (half of the total 600ml). Stir occasionally and allow to melt for approximately until mostly smooth.
Once the Mars bar and cream mixture is melted, turn off the heat. Carefully remove the bowl from the saucepan and allow it to cool for until it is warm but not hot.
Separate 3 eggs, reserving the whites. the 3 egg yolks into the cooled Mars bar mixture. Then, in the remaining 300ml of cream until fully combined.
In a separate bowl, beat the reserved egg whites until they form stiff peaks. Gently fold the beaten egg whites into the Mars bar mixture until just combined, being careful not to deflate the whites.
Pour the complete mixture into an old ice cream tub or a freezer-safe container. Place the lid on the tub and freeze for approximately , or until firm.
Once frozen, scoop the Mars bar ice cream into cones or bowls. Optionally, drizzle with melted chocolate and garnish with a piece of Mars bar.
• Ensure the water and the bowl do not come into contact when melting the Mars bars to prevent burning the chocolate.

Freeze the ice cream
Pour the complete mixture into an old ice cream tub or a freezer-safe container.
Place the lid on the tub and freeze for approximately 6 to 8 hours, or until firm.
