Coconut Jaggery Barfi

Ingredients

Main Ingredients

  • 2 CupsGrated Coconut
  • 2 CupsJaggery
  • 1 CupWater
  • 6-7 pods (crushed)Cardamom
  • 1/4 CupGhee

Step-by-Step Instructions

  1. 1.Melt Jaggery

Add 2 cups of jaggery to a pan. Add 1 cup of water and stir continuously on high flame until the jaggery completely melts and forms a liquid. Ensure all jaggery lumps are dissolved.

  2. 2.Add Grated Coconut

Once the jaggery is fully melted and bubbling, add 2 cups of finely grated coconut to the pan. Stir well to combine the coconut with the melted jaggery.

  3. 3.Cook Coconut Mixture

Continue stirring the mixture on high flame for about 2 minutes until it starts to thicken and the coconut is well coated with jaggery syrup.

  4. 4.Add Cardamom and Ghee

Add the crushed cardamom (from 6-7 pods) to the mixture. Then, add 1-2 spoons of ghee and mix thoroughly to incorporate the flavors and prevent sticking.

  5. 5.Continue Cooking until Mixture Leaves Pan

Keep adding ghee in small intervals (as needed) and stirring continuously on high flame. Continue cooking until the mixture starts to leave the sides of the pan and forms a cohesive mass. This process should take approximately 10-12 minutes in total from when the coconut was added.

  6. 6.Pour into Greased Tray

Once the mixture is ready and leaves the pan easily, turn off the heat. Immediately pour the hot mixture into a ghee-greased tray or plate.

  7. 7.Set and Cut Barfi

Spread the mixture evenly in the tray. Let it cool down and set at normal room temperature for 1-2 hours. Once completely set and firm, cut the barfi into desired square or rectangular pieces.
