Follow each step to make the recipe successfully.
Add 1 cup of sugar to a pan. Pour in 3/4 cup of water. Bring the mixture to a boil, stirring occasionally until the sugar dissolves completely and the syrup thickens slightly. Add 1 teaspoon of ghee to the boiling syrup and stir.
In a mixing bowl, combine 1 cup of milk powder and 1/4 cup of maida. Add 2 tablespoons of ghee and 1/2 teaspoon of cardamom powder to the dry ingredients. Mix well with your hands until the mixture resembles breadcrumbs.
Add 1/4 teaspoon of baking powder to the mixture. Gradually add 2-3 tablespoons of milk, a little at a time, and gently to form a soft, smooth dough. Do not over-. The dough should be pliable.
Grease your hands lightly with oil or ghee. Take small portions of the dough and roll them into smooth, crack-free balls. Ensure there are no cracks to prevent them from breaking during frying.
Heat oil or ghee for deep frying in a pan over medium-low heat. Once the oil is moderately hot, gently drop the shaped dough balls into the oil. Fry them on a low flame, turning occasionally, until they turn uniformly golden brown to dark brown. This ensures they cook evenly from the inside.
Once fried, immediately remove the hot gulab jamuns from the oil and transfer them directly into the warm sugar syrup. Let them soak in the syrup for at least to an hour, or until they absorb the syrup and become soft and plump.
Serve the Gulab Jamuns warm or at room temperature. You can garnish with chopped nuts if desired.
