Take 4 raw mangoes (kairi) and peel their skin using a peeler. Discard the peels.
Carefully cut the peeled mangoes to remove the pits and separate the pulp into slices. Ensure any dark spots are removed.
Place a pan on the stove and light the flame. Add approximately 1.5 glasses of water to the pan.
Once the water comes to a boil, add the separated mango pulp slices into the pan.
Add just under 1 cup of sugar to the boiling mangoes. Stir occasionally and continue to boil until most of the water has evaporated and the mango slices become soft and tender.
Once the water has significantly, add 0.5 teaspoon of roasted and crushed cumin powder to the mixture.
Add 0.25 teaspoon of salt to the mixture and stir gently to combine. The mangoes should be fully cooked and soft by now.
Add a tip of a teaspoon of green cardamom powder for enhanced flavor and stir it in.
Tear and add a few fresh mint leaves to the mixture. Turn off the flame and let the mixture rest and cool down slightly.
Once the mixture has cooled down, transfer it to a blender. Blend until you achieve a smooth consistency.
In a small plate, mix 0.5 teaspoon of red chili powder with 2 teaspoons of powdered sugar. Take a serving glass, rub a lemon slice around its rim, and then dip the rim into the chili-sugar mixture to create a coated edge.
Add ice cubes to the prepared glass. Sprinkle a pinch of black salt (optional) and add a few fresh mint leaves for extra flavor and garnish.
Add 1 to 2 tablespoons of the blended raw mango mixture into the glass, adjusting the amount based on your desired strength. Fill the rest of the glass with water.
Garnish the glass with a lemon slice on the rim. Stir gently with a spoon before serving. Enjoy your refreshing raw mango sherbet!
