While the dough rests, prepare the slurry. In a small bowl, combine 4 tablespoons of cooking oil and 3 tablespoons of all-purpose flour (maida). Mix well until a smooth, normal consistency slurry is formed. Set aside.
Divide the rested dough into 6 small, equal-sized balls (pedas). Place them on a plate and cover for another of rest. Take one peda, dust your counter with wheat flour, and roll it out into a very thin, large roti. Apply the prepared oil-flour slurry evenly over the entire surface of the rolled roti using a brush. Fold one side of the roti over, then fold the other side to create a book fold. Apply more slurry on the folded part. Fold again to form a square. Press the corners and edges gently to seal and create layers. Repeat for all pedas. Place the folded dough squares on a plate and cover them, allowing them to rest for (or in the fridge if the weather is warm).
In a deep plate, crack 3 eggs. Add 2 tablespoons of finely chopped onion, 1 tablespoon of chopped green chilies (a mix of red and green for color), 3 tablespoons of fresh chopped coriander, 1 teaspoon of crushed red chili flakes, 1/2 teaspoon of black pepper powder, and 1/2 teaspoon of salt. the egg mixture thoroughly until all ingredients are well combined.
Take one rested, folded dough square. Dust it lightly with wheat flour and roll it out into a thin, square paratha. Ensure it's not too thick. Dip the rolled paratha into the egg mixture, pressing gently to ensure both sides are thoroughly coated with the egg and vegetable mixture. Use a plate to carefully transfer the coated paratha.
Heat a non-stick pan. Carefully place the egg-coated paratha into the hot pan. Drizzle a little oil around the edges of the paratha. Cook on medium-low heat. Once the bottom side is lightly golden, flip the paratha. Gently press the paratha with a spatula as it cooks to help the layers puff up and ensure even cooking. Continue cooking until both sides are golden brown and cooked through. If desired, you can pour a little more egg mixture on top while cooking. Remove the cooked paratha from the pan and place it on a serving plate. Repeat for the remaining parathas.
