Gajar Halwa (Carrot Halwa) - Traditional Indian Sweet

Ingredients

Main Ingredients

  • 1 kgFresh Red Carrots
  • 1 literFull Cream Milk
  • 1 cupSugar
  • 1/2 cupDesi Ghee
  • 1/2 cupKhoya/Mawa
  • 1 teaspoonCardamom Powder
  • 1/4 cupAlmonds
  • 1/4 cupPistachios
  • 1/4 cupCashews

Step-by-Step Instructions

  1. 1.Prepare the Carrots

Wash the fresh red carrots thoroughly under running water, then peel them. Grate all the carrots using a box grater.

  2. 2.Sauté Carrots

Transfer the grated carrots into a large pan. Sauté the carrots over medium heat for about 5-7 minutes, stirring occasionally, until they start to soften slightly.

  3. 3.Slow Cook with Milk

Pour the full cream milk over the sautéed carrots. Bring the mixture to a boil, then reduce the heat to low. Let it simmer, stirring occasionally, until the milk has almost completely evaporated and the carrots are tender, which may take about 20-30 minutes.

  4. 4.Add Sugar and Ghee

Once the milk has reduced, add the sugar to the carrot mixture and mix well. Continue cooking until the sugar dissolves and the mixture thickens. Then, add the Desi Ghee and stir it in, cooking until the ghee is absorbed and the halwa starts to leave the sides of the pan.

  5. 5.Incorporate Khoya and Cardamom

Add the crumbled Khoya/Mawa and cardamom powder to the halwa. Mix thoroughly and cook for another 5-7 minutes, allowing the flavors to meld and the halwa to reach a rich consistency.

  6. 6.Add Nuts and Serve

Stir in the chopped almonds, pistachios, and cashews. Mix well. Serve the Gajar Halwa warm, garnished with additional Khoya/Mawa, almonds, and pistachios.
