  • 2.5 cupMilk powder
  • 3/4 cupSugar
  • 1 cupMilk
  • 1/4 cupGhee
  • 3 tbsp, choppedPistachios

Step-by-Step Instructions

  1. 1.Prepare the Milk Powder Mixture

    In a large bowl, add 2.5 cups of milk powder, 3/4 cup of sugar, and 1 cup of milk. Whisk thoroughly until there are no lumps and the mixture achieves a smooth, consistent batter-like texture.

  2. 2.Cook the Mixture

    Transfer the prepared milk powder mixture into a non-stick pan. Add 1/4 cup of ghee. Mix well on a low flame, ensuring the ghee combines thoroughly with the mixture. Continue stirring constantly. After about 5 minutes, the mixture will begin to thicken. Keep cooking and scraping the sides of the pan to prevent sticking. After approximately 10 minutes, the mixture will turn into a thick, soft dough that holds its shape and has a perfect consistency.

  3. 3.Set the Burfi

    Transfer the cooked burfi mixture into a greased tray. Gently press and level the mixture evenly across the tray using a spatula. Sprinkle 3 tablespoons of chopped pistachios over the top and gently press them into the burfi. Refrigerate the tray for 1 hour to allow the burfi to set completely.

  4. 4.Serve the Burfi

    Once completely set, unmould the burfi from the tray and carefully remove the butter paper. The burfi should be perfectly set and firm. Using a sharp knife, cut the burfi into desired pieces, typically squares or rectangles.
