  5. Water 2.5 cups

  7. Asafoetida 1/8 tsp
  8. Cumin seeds 1/2 tsp
  9. Ginger 1/2 tsp
  10. Green chilli 1 tsp
  11. Curry leaves 4-5
  12. Coriander leaves 2 tbsp
  13. Oil for cooking

Step-by-Step Instructions

Step 1: Prepare the Dosa Batter

In a large bowl, combine 1/2 cup ragi flour, 1/4 cup rice flour, 1/4 cup rava, and salt to taste. these dry ingredients together until well combined. Gradually add 2.5 cups of water while continuously to form a smooth, lump-free batter.

Step 2: Add Flavorings to Batter

To the batter, add 1 small chopped onion, 1/8 tsp asafoetida, 1/2 tsp cumin seeds, 1/2 tsp ginger, 1 tsp green chilli, 4-5 curry leaves, and 2 tbsp coriander leaves. Mix all the ingredients thoroughly with a spoon until evenly distributed.

Step 3: Rest the Batter

Allow the prepared dosa batter to rest for . After resting, give it another good mix before proceeding.

Step 4: Cook the Dosa

Heat a non-stick pan over medium heat. Pour one ladle of the batter onto the hot pan and spread it evenly in a circular motion to form a thin dosa. Drizzle some oil around the edges of the dosa.

Step 5: Achieve Crispy Texture

Cook the dosa for until the bottom turns golden brown and crispy, and small holes appear on the surface. Carefully flip the dosa and cook for another minute on the other side.

Step 6: Serve

Once cooked, transfer the crispy ragi dosa to a plate. Repeat the process for the remaining batter. Serve hot with coconut chutney.
