Follow each step to make the recipe successfully.
Grate the paneer into a bowl. Finely chop the onion, green chili, and coriander leaves using a chopper or knife.
To the grated paneer, add the chopped coriander leaves, salt as per taste, half a teaspoon of coriander powder, half a teaspoon of garam masala powder, and the finely chopped onion and green chili. Mix all ingredients thoroughly by hand until well combined.
Take a ball of whole wheat dough and flatten it slightly. Spread a little oil or ghee on the flattened dough. Place a portion of the prepared paneer filling in the center of the dough. Carefully fold the edges of the dough over the filling to seal it, forming a square shape.
Lightly dust the work surface with flour. Place the stuffed dough ball on it and gently roll it out into a square-shaped paratha using a rolling pin. Ensure to roll it evenly and gently to prevent the filling from coming out.
Heat a tawa or flat pan over medium heat. Add a little oil or ghee to the pan. Place the rolled paratha onto the hot pan. Cook for a minute or two until small bubbles appear and the bottom is lightly golden.
Apply a dollop of butter or ghee on the top side of the paratha. Flip the paratha and cook the other side until golden brown spots appear. Press gently with a spatula to ensure even cooking and a crispy texture. Flip again and cook until both sides are well-cooked and golden brown.
In a blender jar, add fresh coriander leaves, green chilies, salt as per taste, a pinch of spice powder (like chaat masala or asafoetida), garlic cloves, and a piece of ginger. Squeeze in the juice of half a lime. Add 2-3 ice cubes to help retain the vibrant green color and blend until a smooth paste is formed.
Serve the hot paneer parathas with the freshly made green chutney.
