Step-by-Step Instructions

Step 1: Prepare Sugar Syrup

Add 1 cup of sugar and 2 cups of water to a saucepan. Stir on medium flame until the sugar melts completely. Add 3-4 crushed green cardamoms for flavor. Continue stirring until the mixture comes to a good boil. Once boiled, turn off the gas and set aside.

Step 2: Dry Roast Wheat Flour

In a separate pan, add 1 cup of wheat flour. Dry roast on low flame, stirring continuously, for until it changes color slightly and releases a mild aroma. Transfer the roasted flour to a plate and set aside.

Step 3: Fry Dry Fruits

In the same pan, add 3/4 cup of ghee and let it melt and heat up. Add cashews, almonds, and raisins (approximately 1/4 cup each or as desired). Fry on low flame for , stirring, until the raisins puff up and the nuts get a light golden color. Remove the fried dry fruits from the ghee and set aside, reserving some for garnish.

Step 4: Roast Flour in Ghee

In the remaining ghee in the pan, add the dry-roasted wheat flour. Mix the flour well with the ghee. Roast the flour on low flame, stirring continuously, for until it turns a rich dark brown color and a strong fragrant aroma is released.

Step 5: Add Sugar Syrup to Flour

Gradually pour the prepared sugar syrup into the roasted flour mixture while continuously stirring with one hand to prevent lumps. Continue stirring on low flame for until the mixture thickens and starts to leave the sides of the pan.

Step 6: Final Mix with Ghee and Dry Fruits

Add 1-2 tablespoons of fresh ghee to the halwa. Mix well until the ghee is fully incorporated and the halwa becomes glossy. Add the fried dry fruits (reserving some for garnish) and mix them into the halwa. Cook for another .

Step 7: Serve

Transfer the hot Aate ka Halwa to a serving bowl. Garnish with the reserved fried dry fruits. Serve warm or at room temperature.
