Add half a teaspoon of chilli flakes, 1 teaspoon of mixed herbs, half a teaspoon of pepper powder, 1 teaspoon of salt, 2 tablespoons of chilli sauce, and 2 tablespoons of vinegar. Toss on high flame until the spices are aromatic and well combined with the vegetables.
Add 6 cups of cooked rice to the pan. Mix gently to combine all the ingredients. Continue to toss on high flame for a few minutes to achieve a smoky, restaurant-style flavor and ensure everything is well combined.
Heat 2 teaspoons of oil in a separate pan. Add 10 paneer cubes and roast them until they are golden brown and slightly crispy on the outside, while remaining soft on the inside. Drain the fried paneer and set it aside.
In a kadai, heat 2 tablespoons of oil. Add 2 tablespoons of finely chopped ginger garlic and 2 finely chopped green chillies. Stir fry until the garlic becomes aromatic.
Add half a chopped onion and half a chopped capsicum to the kadai. Stir fry on high flame until the capsicum turns crunchy; do not overcook it.
Add 2 tablespoons of chilli sauce, 2 tablespoons of tomato sauce, 2 teaspoons of vinegar, 2 teaspoons of soy sauce, and half a teaspoon of salt. Stir fry on high flame until all the sauces are well combined and heated through.
Add half a cup of corn flour slurry (prepared by mixing 1 teaspoon of corn flour in 1/2 cup of water) to the sauce. Mix well to ensure there are no lumps. Cook the sauce, stirring continuously, until it thickens and becomes smooth and glossy.
Add the roasted paneer to the glossy sauce and mix gently until all the paneer cubes are well coated with the sauce. Serve the spicy, garlicky hot chilli garlic paneer sauce immediately with the hot corn capsicum rice.
