  6. Thickened cream (whipping cream) 1 cup
  7. White chocolate 200g
  8. Chocolate Tim Tam biscuits (roughly chopped) 100g

Step-by-Step Instructions

Step 1: Prepare the Tim Tam Base

Break up 300g of chocolate Tim Tam biscuits and place them into a food processor. Process until they form fine crumbs. Add 70g of melted butter (allowed to cool slightly) to the crumbs and process again until everything is combined and forms a dough-like mixture.

Step 2: Form the Cheesecake Base

Line a 20cm springform tin (or a cake tin with a removable bottom and sides) with non-stick baking paper, greasing it first. Place the Tim Tam mixture into the tin. Using clean hands, gently press the mixture out to cover the base, and use a flat-bottomed drinking glass to even it out and create a slight border up the sides. Place the tin into the fridge to chill while preparing the filling.

Step 3: Dissolve Gelatin

In a small heatproof container, combine 1/4 cup of boiling water with 3 level teaspoons of gelatin powder. Whisk with a fork until the gelatin is completely dissolved. Set aside to cool.

Step 4: Prepare the Cheesecake Filling

In a food processor, add 375g of cream cheese (Philadelphia style), 1/2 cup of caster sugar, 1 teaspoon of vanilla extract, and 1 cup of thickened cream. Process until combined and smooth.

Step 5: Incorporate Chocolate and Gelatin

While the food processor motor is running, gradually add 200g of melted and cooled white chocolate and the dissolved gelatin mixture to the cream cheese mixture. Continue processing until everything is well combined and smooth.

Step 6: Add Chopped Tim Tams to Filling

Roughly chop 100g of additional Tim Tam biscuits. Add these chopped biscuits to the cheesecake filling in the food processor and gently stir and fold them through by hand.

Step 7: Assemble and Chill the Cheesecake

Pour the cheesecake mixture into the prepared Tim Tam base in the springform tin. Spread evenly. Place the cheesecake into the fridge to set for at least , or preferably overnight, until completely firm.

Step 8: Decorate and Serve

Once set, remove the cheesecake from the tin. Decorate the top with additional roughly chopped Tim Tam biscuits for extra crunch and flavour. Slice and serve this phenomenal Tim Tam cheesecake.

• Chill the cheesecake overnight for best results, or at least a minimum of 6 hours until completely set.

• Use original Tim Tam biscuits for this recipe, as other flavours may have different consistencies and might not work as well, especially for the base.
