Follow each step to make the recipe successfully.
Heat 2 tablespoons of ghee in a large pan. Add 1 teaspoon of cardamom powder and a few cardamom pods (if using) and for about until fragrant.
Add 1 kg of grated carrots to the pan.
Mix the grated carrots well with the ghee and cardamom, ensuring they are evenly coated.
Cover the pan with a lid and cook the carrots on medium heat for about , allowing them to soften and release their moisture.
Uncover the pan and stir the carrots to prevent sticking and ensure even cooking.
Add 1.5 cups of sugar to the softened carrots.
Mix the sugar thoroughly with the carrots. The sugar will start to dissolve and release more liquid.
Cover the pan again and cook for another , allowing the sugar to fully dissolve and combine with the carrots.
Uncover the pan and continue to cook, stirring occasionally, until most of the liquid has evaporated and the halwa thickens.
Add 1.5 cups of milk powder (or grated khoya) to the carrot mixture.
Mix well until the milk powder is fully incorporated and the halwa comes together, cooking for another until it reaches a thick, fudgy consistency and starts leaving the sides of the pan.
In a separate small pan, heat 1 tablespoon of ghee and fry 1/2 cup of almonds until they are lightly golden brown. Set aside.
Take a serving dish and spread a layer of 1/2 cup of grated khoya or paneer at the bottom.
Add a generous layer of the prepared Gajar Halwa over the grated khoya/paneer.
Add another layer of the remaining 1/2 cup of grated khoya or paneer on top of the halwa.
Garnish the Gajar Halwa with the fried almonds.
Serve the Gajar Halwa warm.
