Take a bowl and add 4 medium-sized boiled potatoes. Mash them thoroughly with a fork until smooth.
To the mashed potatoes, add 1 chopped green chili, 1 small chopped onion, 0.5 Tbsp coriander powder, 0.33 Tbsp cumin powder, 0.25 Tbsp cinnamon powder, salt to taste, 1 Tsp turmeric powder, and red chili powder to taste. Mix all ingredients well until combined and the stuffing is ready.
In a separate bowl, add 1 cup flour, 2 pinches of carom seeds, 0.33 Tbsp cumin seeds, a sprinkle of black pepper powder, salt to taste, 0.33 cup chopped spinach, and 1 Tbsp oil. Mix these dry ingredients well.
Gradually add water to the mixture and knead to form a soft dough. Divide the dough into 4 equal balls.
Dust a surface with flour. Take one dough ball and roll it into a small, flat disc. Place a portion of the prepared potato stuffing in the center of the dough. Carefully bring the edges of the dough together to seal the stuffing inside, forming a ball. Gently flatten the ball into a thick flatbread, ensuring it is well sealed.
Grease a steamer plate with oil. Place the stuffed flatbreads on the greased steamer plate. Place the steamer plate over a pot of hot water and steam for . Carefully take out the steamed flatbreads.
Heat 2 Tbsp of oil in a pan over medium-high flame. Place the steamed flatbreads in the pan. Sprinkle chili flakes and mustard seeds over them. Shallow fry until light brown on one side, then flip and fry the other side until golden brown and cooked through.
Once both sides are golden brown, remove the flatbreads from the pan. Serve hot with any sauce of your choice.
