Crack one egg into a small bowl, ensuring the yolk remains intact.
Place a small pan on the stove over medium heat. Add 1-2 tablespoons of cooking oil. Once hot, carefully pour the egg from the bowl into the pan. Let the egg white spread and begin to set.
Using a knife, make a small incision on the egg yolk. This helps prevent it from bursting and allows it to cook more evenly.
Once the egg white is mostly set and the yolk is slightly cooked (around 0:06), pour any remaining raw egg mixture from the bowl over the cooked egg. Immediately add the finely chopped onions, followed by the finely chopped tomatoes.
Sprinkle 1/4 teaspoon of salt, 1/2 teaspoon of red chili powder, and 1/4 teaspoon of cumin powder evenly over the egg and vegetables. Then, add the chopped fresh coriander leaves.
Allow the ingredients to cook together for about , letting the flavors meld. Then, using a spatula, carefully fold the egg over, encasing the toppings inside, similar to an omelette.
Continue cooking the folded egg for another on each side, or until both sides are golden brown and the egg is fully cooked through.
Carefully transfer the cooked stuffed fried egg to a serving plate. Garnish with a few extra fresh coriander leaves and a small piece of onion. Cut into halves or quarters and serve hot.
