Homemade Spiced Paneer (Chilli Paneer)

  • 1 teaspoonBlack peppercorns (for roasting)
  • 1 teaspoonWhole cumin seeds
  • 1 teaspoonChopped ginger
  • 1 teaspoonChopped green chilies
  • 1 teaspoonChopped red chilies
  • 1 tablespoonChopped coriander leaves
  • 1 teaspoonChili flakes

Step-by-Step Instructions

  1. 1.Roast Cumin Seeds

    Place 1 teaspoon of cumin seeds on a hot tawa (griddle) and roast them for approximately 20-30 seconds until they become fragrant and slightly darker. Transfer them to a bowl.

  2. 2.Roast Black Peppercorns

    Add 1 teaspoon of black peppercorns to the same hot tawa and roast for about 20-30 seconds until fragrant. Transfer them to the same bowl as the cumin seeds.

  3. 3.Grind Spices

    Transfer the roasted cumin seeds and black peppercorns into a mortar and pestle. Grind them into a coarse powder. Set aside.

  4. 4.Prepare Curdling Agent

    In a small bowl, combine 2 tablespoons of white vinegar with 2 tablespoons of water. Mix well and set aside.

  5. 5.Heat Milk

    Pour 1 liter of milk into a pot and place it on a stove over medium heat. Stir the milk occasionally with a ladle to prevent it from sticking to the bottom or scorching. Bring the milk to a hot temperature, just before it starts to boil.

  6. 6.Add Spices and Herbs to Milk

    Once the milk is hot, add 1 teaspoon of whole cumin seeds, 1 teaspoon of chopped ginger, 1 teaspoon of chopped green chilies, 1 teaspoon of chopped red chilies, 1 tablespoon of chopped coriander leaves, the roasted and ground cumin and black pepper mixture (from step 3), 1 teaspoon of chili flakes, and 1 teaspoon of salt. Stir all the ingredients thoroughly into the milk.

  7. 7.Curdle the Milk

    Gradually pour the vinegar-water mixture (from step 4) into the spiced milk while continuously stirring. Continue stirring for approximately 30-40 seconds until the milk completely curdles and separates into solid paneer curds and greenish whey.

  8. 8.Strain the Paneer

    Line a colander or a large sieve with a clean muslin cloth. Carefully pour the curdled milk mixture into the muslin cloth to separate the paneer from the whey.

  9. 9.Rinse the Paneer

    Gently rinse the paneer curds in the muslin cloth by pouring cold water over them. This step helps to wash away any lingering vinegar taste.

  10. 10.Press the Paneer

    Gather the edges of the muslin cloth and gently squeeze out any remaining excess water from the paneer. Transfer the paneer into a paneer press (a perforated metal box). Place the lid on the press and then place a heavy object, such as a stone or a heavy pot, on top of the lid. Let it press for at least 30 minutes to 1 hour to form a firm block of paneer.

  11. 11.Unmold and Serve

    After the pressing time, remove the heavy object and the lid from the paneer press. Carefully unmold the firm spiced paneer block. Slice the paneer into desired shapes, such as cubes or rectangles, and it's ready to be used in your favorite recipes or served as is.
