Follow each step to make the recipe successfully.
Measure out all ingredients: 1/2 cup sooji, 1/2 cup ghee, 1/2 cup sugar, 1.5 cups milk, 4 tbsp mixed dry fruits (cashews, almonds, raisins), 1/2 tsp cardamom powder, and 2 pinches of saffron (optional).
Heat 1/2 cup of ghee in a pan over low-medium flame. Add the 1/2 cup sooji and roast it, stirring continuously, for until it turns golden brown.
While the sooji is roasting, boil 1.5 cups of milk in a separate saucepan. Once the milk boils, add 1/2 cup sugar and stir until the sugar completely dissolves. Keep it warm.
Once the sooji is golden brown, add the 4 tablespoons of chopped dry fruits (cashews, almonds, raisins) to the pan. Fry for about until the raisins puff up and the nuts are lightly .
Carefully and gradually pour the hot milk-sugar mixture into the sooji mixture while continuously stirring. Be cautious as the hot ghee and milk will sizzle and splash. Mix well to combine.
Add 1/2 teaspoon of cardamom powder and 2 pinches of saffron (if using) to the halwa. Stir well. the flame to low and cook for , stirring occasionally, until the halwa thickens and absorbs most of the liquid.
Cover the pan with a lid and let the halwa cook on low flame for another to allow the sooji to fully swell and become soft. Uncover, stir, and if desired, add 2-3 tablespoons of extra ghee for added moisture and richness. Mix well. Cover again and cook for 2 more minutes on low flame. The halwa should be soft and each grain separate.
Turn off the heat. Serve the hot Sooji Halwa garnished with additional sliced almonds or your favorite dry fruits. Enjoy!
