Step-by-Step Instructions

  1. 1.Boil Milk

    Pour 2 liters of milk into a large, heavy-bottomed pot. Place the pot on the stove and turn on the gas to medium-high heat. Bring the milk to a boil, stirring occasionally to prevent it from scorching at the bottom.

  2. 2.Prepare Rice

    While the milk is boiling, thoroughly wash 200 grams of Basmati rice under running water until the water runs clear. This helps remove excess starch.

  3. 3.Add Rice to Milk

    Once the milk comes to a rolling boil, add the washed Basmati rice to the milk. Stir well to combine the rice with the milk and ensure it doesn't clump together or stick to the bottom.

  4. 4.Add Dry Fruits

    Add 2 tablespoons of raisins, 5-6 chopped cashews, and 1 tablespoon of chopped pistachios to the milk and rice mixture. Stir all the ingredients together.

  5. 5.Cook Kheer

    Reduce the flame to low-medium. Cover the pot partially with a lid, leaving a small gap to prevent the milk from boiling over. Cook the kheer for approximately 45-60 minutes, stirring frequently (every 5-10 minutes) to ensure the rice cooks evenly and the kheer doesn't stick to the bottom. The kheer should thicken and the rice should become soft.

  6. 6.Check Rice Doneness

    After cooking for the estimated time, take a small amount of rice from the kheer on a spoon. Press it between your fingers to check if it's fully cooked and soft. It should mash easily.

  7. 7.Add Cardamom Powder and Sugar

    Once the rice is cooked and the kheer has reached a desired thick consistency, add 1/2 teaspoon of cardamom powder and 1 cup of sugar. Stir thoroughly until the sugar completely dissolves into the kheer.

  8. 8.Final Boil and Serve
