For Chicken Filling

  • 1 CupBoiled shredded chicken
  • as per tasteSalt
  • 1/2 TbsBlack pepper
  • 1/2 TbsRed chilli powder
  • 3-4 tbsChilli Garlic Sauce/pizza sauce
  • 1/4 CupCapsicum (diced)
  • 1/4 CupTomatoes (diced)
  • 1/4 CupOnions (diced)
  • 1/2 CupCheese (shredded)

For Coating & Frying

  • 2-3 slices (for breadcrumbs)Leftover Bread
  • for wetting handsOil
  • 1 large (whisked, for dipping)Egg
  • 2-3 cups (for deep frying)Oil

Step-by-Step Instructions

  1. 1.Prepare the Potato Base

    In a bowl, combine 2 large boiled mashed potatoes, salt as per taste, 1 egg, and 1/2 cup all-purpose flour. Mix thoroughly until a smooth dough forms.

  2. 2.Chill the Potato Dough

    Place the prepared potato dough in the refrigerator for some time to firm up, making it easier to handle.

  3. 3.Prepare the Chicken Filling

    In a separate bowl, combine 1 cup of boiled shredded chicken, salt as per taste, 1/2 tablespoon black pepper, 1/2 tablespoon red chili powder, 3-4 tablespoons of chili garlic sauce (or pizza sauce), diced capsicum, diced tomatoes, and diced onions.

  4. 4.Add Cheese to Filling

    Add 1/2 cup of shredded cheese to the chicken and vegetable mixture. Mix all ingredients well to ensure the cheese is evenly distributed.

  5. 5.Make Breadcrumbs

    Take leftover bread slices and blend them in a food processor until fine breadcrumbs are formed. Transfer the breadcrumbs to a plate.

  6. 6.Prepare for Coating

    Place the prepared breadcrumbs on one plate and whisk 1 large egg in a separate bowl for dipping.

  7. 7.Shape the Cutlets

    Wet your hands with oil to prevent sticking. Take a small portion of the chilled potato mixture, flatten it into a disc. Place a spoonful of the chicken and cheese filling in the center, then carefully close the edges of the potato mixture around the filling to form a round or oval cutlet.

  8. 8.Coat the Cutlets

    Dip each shaped cutlet first into the whisked egg, ensuring it's fully coated. Then, roll the cutlet in the prepared breadcrumbs until it is completely covered.

  9. 9.Deep Fry the Cutlets

    Heat 2-3 cups of oil in a pan on low flame. Carefully place the coated cutlets into the hot oil. Fry both sides for 8-10 minutes, turning occasionally, until they are golden brown and crispy.
