Moringa Vada / Drumstick Leaves Fritters

  • 2 cupWashed Moringa leaves
  • 2 tbspSoaked chana dal
  • 2 tbspSoaked moong dal
  • 2 tbspBesan (Gram flour)
  • 1/2 tspSalt
  • 1/2 tspTurmeric powder
  • 1/2 tspChilli flakes
  • 1/2 tspBlack pepper powder
  • 1/2 tspCarom seeds (Ajwain)
  • 1/2 tspSesame seeds
  • 1 tbspRice flour
  • 2 tbspWater
  • 4 tbspOil for frying

Step-by-Step Instructions

  1. 1.Prepare Moringa Leaves

    Wash the moringa leaves thoroughly and then roughly chop them. Transfer the chopped leaves into a large mixing bowl.

  2. 2.Combine Dry Ingredients

    Add the soaked chana dal, soaked moong dal, besan, salt, turmeric powder, chilli flakes, black pepper powder, carom seeds, sesame seeds, and rice flour to the bowl with the moringa leaves.

  3. 3.Mix and Form Dough

    Start mixing all the ingredients by hand. Gradually add 2 tablespoons of water and continue mixing until a cohesive dough forms. The mixture should be firm enough to shape.

  4. 4.Shape the Vadas

    Take small portions of the mixture and flatten them slightly to form round patties or vadas.

  5. 5.Fry the Vadas

    Heat 4 tablespoons of oil in a pan over medium flame. Once the oil is hot, carefully place the shaped vadas into the pan. Fry them until both sides are golden brown and crispy, about 2-3 minutes per side.

  6. 6.Serve

    Remove the fried vadas from the oil and place them on a plate lined with paper towels to absorb excess oil. Serve hot with your favorite chutney or dip.
