Step-by-Step Instructions

Step 1: Prepare the Egg Mixture

In a measuring jug or bowl, combine 4 eggs, 2 tbsp milk, 1/4 tsp salt, 1/4 tsp chilli powder, 1/4 tsp black pepper, and 2 tbsp chopped fresh coriander. Whisk everything together until well combined.

Step 2: Cook the Omelette

Heat 2 tbsp of oil in a non-stick pan over medium heat. Once the oil is hot, pour in the whisked egg mixture and let it spread evenly.

Step 3: Flip the Omelette

Cook the omelette for 1-2 minutes, or until the edges are set. Gently lift the edges to let the uncooked egg run underneath. Once the bottom is golden and the top is almost set, carefully flip the omelette.

Step 4: Add the Filling

On one half of the flipped omelette, spread a layer of pre-cooked mince. Top the mince with a generous amount of shredded cheddar and mozzarella cheese.

Step 5: Fold and Melt the Cheese

Carefully fold the other half of the omelette over the filling. Cover the pan with a lid and cook on low heat for about 1 minute, or until the cheese has completely melted.

Step 6: Garnish and Serve

Slide the finished omelette onto a serving plate. Sprinkle with fresh coriander and drizzle with Sriracha sauce. Serve immediately with slices of bread or paratha.

Pro Tips

Ensure the mince is pre-cooked and warm before adding it to the omelette for the best results.

Cook the omelette on medium-low heat to prevent it from browning too quickly before the inside is set.

Feel free to adjust the amount of cheese to your liking.

Recipe Variations

Add finely chopped onions, bell peppers, or tomatoes to the egg mixture for extra vegetables.

Use different types of cheese like pepper jack for a spicy kick.

Substitute chicken mince for a leaner protein option.
