  • 2 CupsWhite flour (maida)
  • 1 tspSalt
  • 1 tspSugar
  • 1 tbspYeast
  • 1 tbspOil
  • 1Egg
  • 1/2 CupMilk

For the Chicken Filling

  • 1-2 tbspOil
  • 1 tspGarlic Chopped
  • 1 tspCumin Seeds
  • 1 CupChicken Boneless
  • 2-3 tbspCapsicum Chopped
  • 2-3 tbspSweet Corn
  • 1-2 tbspBlack Olives
  • 2 tbspOnion Chopped
  • 1/2 tspSalt
  • 1/2 tspRed Chilli powder
  • 1 tspDry Coriander powder
  • 1/2 tspRed Chilli flakes
  • 1/4 tspTurmeric powder
  • 1/2 tspBlack pepper
  • 1/2 tspWhole Spices powder (garam masala)
  • 2-3 tbspPizza Sauce

For Assembly and Topping

Step-by-Step Instructions

  1. 1.Prepare the Dough

    In a large bowl, combine 2 cups of white flour, 1 tsp salt, 1 tsp sugar, and 1 tbsp yeast. Mix these dry ingredients well with a whisk. Add 1 tbsp oil, 1 egg, and 1/2 cup milk. Begin mixing by hand, incorporating water gradually as needed, until a smooth dough forms. Knead the dough until it's smooth and pliable. Add 1 tsp of oil and knead again until the dough is soft and elastic. Cover the bowl with plastic wrap and let it rest in a warm place for 1-2 hours, or until it doubles in size.

  2. 2.Prepare the Chicken Filling

    Heat 1-2 tbsp of oil in a pan. Add 1 tsp chopped garlic and 1 tsp cumin seeds, and sauté until fragrant. Add 1 cup of boneless chicken pieces and cook until the chicken turns white. Cover the pan and cook for 8-10 minutes until the chicken is tender and cooked through. Remove the lid. Add 2-3 tbsp chopped capsicum, 2-3 tbsp sweet corn, 1-2 tbsp black olives, and 2 tbsp chopped onion. Season with 1/2 tsp salt, 1/2 tsp red chili powder, 1 tsp dry coriander powder, 1/2 tsp red chili flakes, 1/4 tsp turmeric powder, and 1/2 tsp black pepper, and 1/2 tsp whole spices powder (garam masala). Mix all ingredients well and cook for a few minutes until vegetables are slightly tender. Stir in 2-3 tbsp of pizza sauce, mix thoroughly, and then turn off the flame. Let the filling cool completely.

  3. 3.Shape the Buns

    Once the dough has risen, gently punch it down to release the air. Transfer the dough to a floured surface and knead it briefly. Divide the dough into 10-12 equal pieces. Take one piece of dough and flatten it into a small disc using a rolling pin. Place a generous amount of grated mozzarella cheese in the center, followed by a spoonful of the cooled chicken filling, and then top with more mozzarella cheese. Carefully gather the edges of the dough over the filling and pinch them together to seal, forming a round bun. Repeat this process for all the dough pieces.

    Arrange the shaped buns on a baking tray lightly sprinkled with flour. Cover the tray with a clean cloth and let the buns rest for another 10-15 minutes to proof. In a small bowl, whisk one egg white. Brush the tops of the buns with the egg white. Sprinkle sesame seeds, oregano, and red chili flakes over each bun. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes, or until golden brown and cooked through.
