Ingredients

  • 1/2 litreMilk (full fat)
  • 1/2 cupCondensed milk
  • 1/4 tspCardamom powder
  • 1/4 cupRice (washed, soaked, dried, and powdered)
  • 2 tbspAlmonds (sliced)
  • 2 tbspPistachios (chopped)

Step-by-Step Instructions

  1. 1.Prepare the Rice

    Wash 1/4 cup of rice thoroughly, soak it for 2-3 hours, then dry it completely. Once dried, grind the rice into a fine powder.

  2. 2.Heat the Milk

    Pour 1/2 litre of full-fat milk into a pan and heat it until it comes to a boil. Ensure the milk is hot before adding other ingredients.

  3. 3.Add Rice Powder

    Once the milk is hot and boiling, add the powdered rice to the pan. Stir continuously to prevent lumps and ensure the rice mixes well with the milk.

  4. 4.Cook Rice and Milk

    Cook the mixture on low flame for 10-12 minutes, stirring continuously. Make sure to scrape the sides of the pan to incorporate any milk solids back into the mixture and prevent burning.

  5. 5.Add Cardamom Powder

    After 10-12 minutes, add 1/4 teaspoon of cardamom powder to the mixture. Mix it well until fully incorporated.

  6. 6.Incorporate Condensed Milk

    Gradually add 1/2 cup of condensed milk to the pan, stirring continuously. Continue to stir and cook on low flame for another 5-10 minutes, or until the kheer thickens to your desired consistency. The kheer should be thick and creamy.

  7. 7.Add Nuts and Serve

    Add some chopped almonds and pistachios to the kheer and mix well. Reserve some for garnishing. Dish out the Rabri Kheer into serving bowls, garnish with the remaining nuts, and serve chilled.
