Brioche Sofficissime (Very Soft Brioche Buns)

Ingredients

Brioche Dough

  • 650 gFlour type 0
  • 2Eggs
  • 100 gSugar
  • 100 mlSeed oil
  • 2 gSalt
  • 5 gFennel seeds
  • 14 gFresh yeast
  • 250 mlMilk or water

Filling and Topping

  • 180 gNutella or jam
  • 1Egg yolk
  • 1 tbspMilk
  • 10 gSesame seeds

Step-by-Step Instructions

  1. 1.Combine Dry and Wet Ingredients

    In a large bowl, add 650g of flour type 0, 2 eggs, 100g of sugar, 100ml of seed oil, a pinch of salt (approx. 2g), and 5g of fennel seeds. Mix these ingredients with a spatula until partially combined.

  2. 2.Activate Yeast

    In a separate small bowl, combine 14g of fresh yeast with a teaspoon of sugar. Mix well until the yeast dissolves and forms a creamy paste.

  3. 3.Combine Yeast and Liquids

    Add the activated yeast mixture to the large bowl with the other ingredients. Pour in 250ml of water or milk.

  4. 4.Knead the Dough

    Begin kneading the dough by hand directly in the bowl, incorporating all the flour. Continue kneading until the dough comes together and becomes smooth and elastic, about 10-15 minutes. The dough should be soft and pliable.

  5. 5.First Rise

    Lightly grease a clean bowl with a drizzle of oil. Place the dough ball in the oiled bowl, turning it to coat. Cover the bowl with a clean towel or plastic wrap and let it rise in a warm place for at least 1 hour, or until it has doubled in size.

  6. 6.Divide and Shape the Dough

    Once the dough has risen, gently punch it down to release the air. Transfer the dough to a clean surface and divide it into 9 equal portions using a dough scraper. Roll each portion into a smooth ball.

  7. 7.Fill the Brioche Buns

    Take one dough ball and flatten it into a disc. Place a spoonful of Nutella or jam (approximately 15-20g) in the center of the disc. Carefully fold the edges of the dough over the filling and pinch them together to seal, forming a round bun. Repeat for all dough portions.

  8. 8.Second Rise

    Arrange the filled brioche buns on a baking sheet lined with parchment paper, leaving some space between them. Cover the baking sheet with a clean towel and let the buns rise for another 30 minutes, or until they look slightly puffy.

  9. 9.Prepare for Baking

    Preheat your oven to 180°C (350°F). In a small bowl, whisk together one egg yolk with 1 tablespoon of milk. Gently brush the tops of the risen brioche buns with this egg wash. Sprinkle sesame seeds over each bun.

    Place the baking sheet in the preheated oven and bake for approximately 25-30 minutes, or until the brioche buns are golden brown and cooked through.
