Dipping Sauce

  • 1/4 cup choppedFresh Dill
  • 2 tbspKetchup
  • 2 tbspMayonnaise
  • 1 tbspMustard
  • 1 tspWorcestershire Sauce
  • 1 tspBrown Sugar
  • 1 tspLemon Juice
  • 1/2 tspChili Flakes

Step-by-Step Instructions

  1. 1.Boil Chicken Drumsticks

    Collect fresh water in a cast iron pot and place it over a campfire. Once the water is boiling, add the chicken drumsticks (after scoring them with a knife) and boil until fully cooked, about 20-25 minutes. Remove the cooked chicken from the pot.

  2. 2.Boil Potatoes

    Wash the potatoes thoroughly in the stream. Cut them into halves or quarters and add them to the same boiling water. Cook until tender, about 15-20 minutes. Cover the pot while cooking.

  3. 3.Prepare Chicken Meat

    Once the chicken drumsticks are cooked, carefully remove the meat from the bones, leaving the bone intact to serve as the 'lollipop stick'. Finely chop the chicken meat and transfer it to a wooden bowl.

  4. 4.Prepare Potato Mixture

    Take the boiled potatoes and mash them using a potato ricer, adding the mashed potatoes to the bowl with the chopped chicken. Add shredded cheese, paprika, cumin powder, garlic powder, salt, and black pepper to the mixture. Mix thoroughly by hand until a cohesive dough-like consistency is formed.

  5. 5.Form Chicken Lollipops

    Take a portion of the chicken and potato mixture, flatten it in your hand. Place a small cube of butter in the center, then wrap the mixture around one of the reserved chicken bones, forming a drumstick or lollipop shape. Repeat for all drumsticks.

    Prepare an egg wash in one tray and breadcrumbs in another. Dip each formed chicken lollipop first into the egg wash, ensuring it's fully coated, then roll it in the breadcrumbs until completely covered. Heat cooking oil in the cast iron pot over the campfire. Deep-fry the breaded chicken lollipops until they are golden brown and crispy, about 5-7 minutes per batch.
