Sweet Fennel and Raisin Bread Rolls – Italian Style

Ingredients

Main Ingredients

  • 800 gr00 Flour
  • 70 grGranulated Sugar
  • 1 teaspoonFennel Seeds
  • 2 teaspoonsSeed Oil
  • 14 grFresh Yeast
  • 1 teaspoonHoney
  • 1Egg (for dough)
  • 1 teaspoonSalt
  • 350 mlLukewarm Water
  • 80 grRaisins
  • for greasingButter

For Egg Wash

  • 1Egg

Step-by-Step Instructions

  1. 1.Combine Dry Ingredients

Add 800g of 00 flour, 70g of granulated sugar, and 1 teaspoon of fennel seeds to a large mixing bowl. Mix the dry ingredients thoroughly with a whisk.

  2. 2.Add Wet Ingredients

Add 2 teaspoons of seed oil to the dry ingredients. In a separate small bowl, mix 14g of fresh yeast with 1 teaspoon of honey until combined, then add this mixture to the large bowl. Crack 1 egg into the bowl, add 1 teaspoon of salt, and pour in 350ml of lukewarm water.

  3. 3.Knead the Dough

Knead the mixture using a stand mixer with a dough hook attachment (or by hand) until a smooth, elastic dough forms.

  4. 4.Incorporate Raisins and First Rise

Lightly grease a clean bowl with butter. Transfer the kneaded dough to the greased bowl. Add approximately 80g of raisins to the dough and gently fold and press them in until evenly distributed. Cover the bowl with a clean cloth and let the dough rise in a warm place for 1 hour, or until it has doubled in size.

  5. 5.Punch Down and Divide Dough

Once the dough has risen, gently punch it down to release the air. Transfer the dough to a clean work surface (like a wooden board) and divide it into approximately 10-12 equal portions.

  6. 6.Shape the Rolls

Take each portion of dough, shape it into a round ball, then flatten it slightly and roll it into an elongated shape, resembling a mini baguette or hot dog bun. Place the shaped rolls onto a baking sheet lined with parchment paper, leaving space between them.

  7. 7.Second Rise

Cover the baking sheet with a clean cloth and let the rolls rise again for 30 minutes.

  8. 8.Prepare for Baking

Preheat your oven to 180°C (350°F). In a small bowl, whisk 1 egg to create an egg wash. Brush the top of each risen roll with the egg wash. Using a sharp knife, make several diagonal cuts across the top of each roll to create a decorative pattern.

  9. 9.Bake

Bake the rolls in the preheated oven for 35 minutes, or until golden brown and cooked through.

  10. 10.Serve

Remove from the oven and let cool slightly before serving.
