Ingredients

  • 1 cup (soaked for 4 hours)Urad Dal (whole, skinless)
  • 1 inch (finely chopped)Ginger
  • 3 (finely chopped)Green Chilies
  • 10-12Black Peppercorns
  • 1 sprig (finely chopped)Curry Leaves
  • 1 (finely chopped)Onion
  • 1/4 tspAsafoetida
  • to tasteSalt
  • very little, as needed for grindingWater
  • for deep fryingCooking Oil

Step-by-Step Instructions

  1. 1.Prepare Urad Dal Batter

    Drain all water from the 1 cup of urad dal that has been soaked for 4 hours. Transfer the drained urad dal into a mixer grinder jar. Add a very small amount of water (just enough to help grind) to the dal. Grind the dal into a very smooth and thick batter. The batter should be fluffy and able to hold its shape.

  2. 2.Mix Ingredients into Batter

    Transfer the ground urad dal batter into a large mixing bowl. Add the finely chopped 1-inch ginger, 3 finely chopped green chilies, 10-12 black peppercorns, finely chopped 1 sprig of curry leaves, 1 finely chopped onion, 1/4 teaspoon of asafoetida, and salt to taste. Mix all the ingredients thoroughly by hand, beating the batter well to incorporate air. This step is crucial for soft vadai.

  3. 3.Check Batter Consistency

    To check if the batter has the right consistency, take a small piece of the batter and drop it into a bowl of water. If the batter floats on the surface, it's ready for frying. If it sinks, continue beating the batter for a few more minutes.

  4. 4.Shape and Fry Medu Vadai

    Heat cooking oil in a pan over medium heat. Wet your hands with water to prevent the batter from sticking. Take a small portion of the batter, flatten it slightly in your palm, and make a hole in the center using your thumb. Gently slide the shaped vadai into the hot oil. Fry the vadai on both sides until they turn golden brown and crispy.

  5. 5.Serve Medu Vadai

    Once the vadai are golden brown and crispy, remove them from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve the hot and crispy Medu Vadai with sambar and chutney.
