Paneer Ghee Roast - Madras Samayal

Ingredients

For Ghee Roast Masala

  • 1 tbspCoriander seeds
  • 1/2 tspPeppercorns
  • 1 tspCumin seeds
  • 1/2 tspFennel seeds
  • 10-12Fenugreek seeds
  • 1.5 tbspKashmiri Chili powder
  • 1/8 tspTurmeric powder
  • 5-6Cashews
  • 1/4 cupCurd (yogurt)
  • as requiredWater

Main Ingredients

  • 200gPaneer
  • 1 medium, finely choppedOnion
  • 1 sprigCurry leaves
  • 2 tsp (1 tsp each)Ginger & Garlic (crushed)
  • as required (approx. 1 tsp)Salt
  • 1.5 tspJaggery (powdered)
  • for garnishCoriander leaves

Step-by-Step Instructions

  1. 1.Prepare the Ghee Roast Masala Base

    In a dry pan, add 1 tablespoon coriander seeds, 1/2 teaspoon peppercorns, 1 teaspoon cumin seeds, 1/2 teaspoon fennel seeds, and 10-12 fenugreek seeds. Dry roast them on medium heat until fragrant, about 1-2 minutes. Turn off the heat and transfer the roasted spices to a mixer jar.

  2. 2.Grind the Masala Paste

    To the mixer jar with roasted spices, add 1.5 tablespoons Kashmiri chili powder, 1/8 teaspoon turmeric powder, 5-6 cashews (preferably soaked for 10 minutes), 1/4 cup curd, and a little water. Grind everything into a very smooth paste. Set aside.

  3. 3.Roast the Paneer

    Heat 1/4 cup ghee in a pan. Once the ghee is melted and hot, add 200g paneer cubes (cut into medium flat pieces). Lightly roast the paneer on both sides until they turn a light golden brown. Do not overcook. Remove the roasted paneer from the pan and set aside.

  4. 4.Sauté Aromatics

    In the same pan with the remaining ghee, add 1 finely chopped medium onion, 1 sprig of curry leaves, and 2 teaspoons of crushed ginger and garlic (1 teaspoon each). Sauté until the onions are translucent and the raw smell of ginger and garlic disappears, about 3-4 minutes.

  5. 5.Cook the Masala

    Add the prepared ghee roast masala paste to the pan. Rinse the mixer jar with a little water and add it to the pan. Add salt as required (approximately 1 teaspoon). Mix everything well and cook on medium-low heat, stirring occasionally, until the masala is well cooked and the oil starts to separate from the sides, about 5-7 minutes.

  6. 6.Combine Paneer and Finish

    Once the masala is cooked, add 1.5 teaspoons of powdered jaggery to balance the flavors. Mix well. Then, add the lightly roasted paneer cubes to the masala. Gently toss to coat the paneer evenly with the masala. Cook for another 2-3 minutes, allowing the paneer to absorb the flavors. Garnish with fresh coriander leaves.

    Your super delicious Paneer Ghee Roast is ready to be served hot. It pairs wonderfully with chapati or can be enjoyed as a frankie-style roll.
