Follow each step to make the recipe successfully.
Cook 1/2 cup (120ml) of rice until fluffy and separate. Slice 1 large or 2 medium-sized onions thinly. You can slice them as desired.
Heat 2 tablespoons of oil in a pan. Add 1/2 teaspoon of mustard seeds and 1/2 teaspoon of cumin seeds. Let them splutter.
Add a few curry leaves and the sliced onions to the pan. Fry until the onions are cooked and soft, turning translucent.
Once the onions are soft, add a big pinch of turmeric powder, salt as per taste, and 1 tablespoon of rasam powder. Mix quickly to combine the spices with the onions.
Add tamarind juice and jaggery to the mixture. Mix well until the jaggery dissolves and the mixture is thoroughly combined.
Add the cooked rice and chopped coriander leaves to the pan. Give it a good mix, ensuring the onion mixture is evenly distributed throughout the rice. Switch off the stove.
Serve the delicious onion rice hot, or pack it for your lunchbox. Enjoy!
