Step-by-Step Instructions

  1. 1.Prepare Semolina Mixture

    In a bowl, combine 1/2 cup semolina (sooji), 1/3 cup curd (dahi), and 1/4 cup water. Whisk the ingredients thoroughly until a smooth mixture is formed. Cover the bowl and let it rest for 2 minutes.

  2. 2.Prepare Flattened Rice

    In a separate bowl, add 1/2 cup flattened rice (poha). Add enough water to cover the poha, gently wash it, and then drain the water. Let the poha soak for a few minutes until it becomes soft.

  3. 3.Combine and Blend

    Add the soaked poha to the semolina mixture. Transfer the entire mixture into a blender jar. Add an additional 1/3 cup of water and blend until a smooth, consistent batter is formed.

  4. 4.Season the Batter

    Pour the blended batter back into the bowl. Add 1/4 tbsp of salt and a pinch of baking soda. Mix everything well until all ingredients are fully incorporated and the batter has a smooth, flowing consistency.

  5. 5.Cook the Pancakes

    Heat a pan (tava) over medium heat. Add a little oil to the pan and brush it evenly. Pour one ladleful of batter onto the hot pan, spreading it slightly to form a round pancake.

  6. 6.Cook Covered

    Cover the pan with a lid and cook the pancake for about 1 minute, or until you see bubbles appearing on the surface and the edges begin to look set.

  7. 7.Flip and Finish Cooking

    Remove the lid. Gently slide a spatula under the pancake and flip it to the other side. Cook for another minute or until it turns golden brown and is cooked through.

  8. 8.Serve

    Remove the cooked pancake from the pan and repeat the process with the remaining batter. Serve the pancakes hot.
