  • 300 mlRich double cream
  • 1/3 cupCaster sugar (superfine white sugar)
  • 1/3 cupFreshly squeezed lemon juice
  • as neededLemon rind (for garnish)

Step-by-Step Instructions

  1. 1.Combine Cream and Sugar

    Into a small saucepan, add 300ml of rich double cream and 1/3 cup of caster sugar. Over a low heat, stir the cream and sugar together until the sugar is dissolved.

  2. 2.Bring to a Boil

    Once the sugar is dissolved, increase the temperature and bring the mixture to a boil.

  3. 3.Simmer

    Once the mixture is boiling, turn the temperature down to low and allow it to gently simmer for about 3 minutes, stirring constantly.

  4. 4.Add Lemon Juice

    After 3 minutes, take the entire pot off the heat. Gradually stir in 1/3 cup of freshly squeezed lemon juice, adding a little at a time and mixing it in until all the juice has been incorporated.

  5. 5.Cool

    Allow the mixture to stand for about 5 minutes to cool slightly.

  6. 6.Portion and Chill

    Divide the mixture between serving glasses (such as martini glasses). Cover each glass with plastic kitchen wrap and place them in the fridge to chill for about 4 hours, or until they are set.

  7. 7.Garnish and Serve

    Once chilled and set, garnish the lemon possets with strips of lemon rind or other preferred toppings before serving.
