Follow each step to make the recipe successfully.
Take a plate of 5-6 puris and gently crack a hole in the center of each puri. Fill each puri with a spoonful of the spiced potato mixture. Drizzle sweet chutney over the potato filling in each puri. Spoon a generous amount of creamy yogurt (dahi) onto each puri. Sprinkle a handful of crispy sev over the yogurt on all puris. Garnish with fresh chopped coriander leaves. Serve the Dahi Puri plate.
For each Pani Puri, take a puri and gently crack a hole in its center. Fill the puri with a spoonful of the spiced chickpea mixture. Offer the customer a choice of sweet tamarind water or spicy mint water. Dip the filled puri into the chosen water. Serve the Pani Puri to the customer immediately.
