Crispy Potato Matar Roll – Indian Snack

Ingredients

For the Filling

  • 2 medium, boiled and mashedPotatoes
  • 1/2 cup, boiledGreen Peas
  • 1/4 cup, finely choppedOnion
  • 1 tspRed Chili Powder
  • 1 tspSalt
  • 1 tspCoriander Powder
  • 1/2 tspTurmeric Powder

For the Rolls

  • 6-8 sheetsSpring Roll Wrappers
  • 2 tbsp (for sealing)Water
  • for deep fryingOil

Step-by-Step Instructions

  1. 1.Prepare the Filling

    In a mixing bowl, combine the boiled and mashed potatoes, boiled green peas, and finely chopped onion. Add red chili powder, salt, coriander powder, and turmeric powder. Mix all ingredients thoroughly until well combined.

  2. 2.Shape the Filling

    Take a small portion of the prepared filling and shape it into an oval or cylindrical form, suitable for rolling.

  3. 3.Prepare the Wrappers

    Lay out a spring roll wrapper. Cut it into strips as shown in the video, if necessary, to create smaller rolls. Place one shaped filling portion near one end of the wrapper.

  4. 4.Roll the Snacks

    Brush a little water along the edges of the wrapper to help seal it. Carefully roll the filling tightly within the wrapper to form a compact roll.

  5. 5.Deep Fry the Rolls

    Heat oil in a pan for deep frying. Once the oil is hot, carefully place the prepared rolls into the hot oil. Fry in batches, turning occasionally, until they are golden brown and crispy on all sides, which takes about 3-5 minutes per batch.

  6. 6.Serve

    Remove the fried rolls from the oil and place them on a paper towel to drain excess oil. Serve hot with ketchup or your favorite dipping sauce.
