Step-by-Step Instructions

Step 1: Prepare and Cook the Potatoes

Peel and chop 3 potatoes into large chunks. Place them in a pot, cover with water, and boil on the stove until they are fully cooked and tender.

Step 2: Mash the Potatoes

Drain the cooked potatoes and transfer them to a large bowl. Mash them thoroughly with a potato masher until smooth.

Step 3: Add Herbs and Cheese

Step 5: Roll and Cut the Dough

Lightly flour a cutting board with cornstarch. Take the dough, place it on the board, and use a rolling pin to roll it out into a flat, even rectangle about 1 cm thick. Use a knife or dough scraper to cut the dough into small, even squares.

Step 6: Fry the Potato Squares

Heat a generous amount of olive oil in a large frying pan over medium-high heat. Carefully place the potato squares into the hot oil, ensuring not to overcrowd the pan. Fry for on each side, until they are golden brown and crispy.
