Cheesy Potato Pancakes

Ingredients

Main Ingredients

  • 500 gPotatoes
  • 1/4 cupCornstarch
  • 1/2 tspSalt
  • 1/2 tspBlack Pepper
  • 1/2 tspPaprika
  • 1/2 tspGarlic Powder
  • 150 gMozzarella Cheese
  • 3 tbspCooking Oil
  • for garnishFresh Parsley (chopped)

Step-by-Step Instructions

  1. 1.Boil the Potatoes

Peel and cut the potatoes into small chunks. Place them in a pot of boiling water and cook until tender, about 10-15 minutes.

  2. 2.Mash the Potatoes

Drain the boiled potatoes and transfer them to a large bowl. Mash them thoroughly with a fork until smooth.

  3. 3.Season the Potato Mixture

Add 1/4 cup of cornstarch, 1/2 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika, and 1/2 tsp garlic powder to the mashed potatoes. Mix well until all ingredients are evenly combined and form a cohesive dough.

  4. 4.Form the Pancakes

Take a small portion of the potato dough and flatten it in your palm. Place a small cube or slice of mozzarella cheese in the center. Carefully seal the potato dough around the cheese, shaping it into a round, flat pancake.

  5. 5.Pan-Fry the Pancakes

Heat 3 tablespoons of cooking oil in a non-stick pan over medium heat. Place the potato pancakes in the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and crispy.

  6. 6.Serve

Remove the cooked potato pancakes from the pan and place them on a serving plate. Garnish with fresh chopped parsley and serve hot with your favorite dipping sauce, such as ketchup.
