Daltjies (Cape Malay Fritters)

Ingredients

Main Ingredients

  • 2 cupsPea/Chana flour
  • 1/2 cupPlain/Cake flour
  • 1 1/2 teaspoonsBaking powder
  • 1 teaspoonSalt
  • 2 teaspoonsCumin
  • 2 teaspoonsCoriander
  • 1 teaspoonTurmeric
  • 3 teaspoonsCrushed chillies
  • 2 cupsChopped spinach
  • 1 (medium)Chopped potato
  • 1 (medium)Chopped onion
  • 3/4 - 1 cupWater
  • Enough for fryingVegetable or sunflower oil

Step-by-Step Instructions

  1. 1.Combine Dry Ingredients

In a large bowl, combine the 2 cups of pea/chana flour, 1/2 cup of plain/cake flour, 1 1/2 teaspoons of baking powder, 1 teaspoon of salt, 2 teaspoons of cumin, 2 teaspoons of coriander, 1 teaspoon of turmeric, and 3 teaspoons of crushed chillies. Stir well to mix all the dry ingredients.

  2. 2.Add Vegetables

Add 2 cups of chopped spinach, 1 chopped medium potato, and 1 chopped medium onion to the bowl with the dry ingredients.

  3. 3.Form the Batter

Gradually add 3/4 to 1 cup of water to the mixture, stirring continuously until a stiff, dropping consistency batter is formed. Ensure all ingredients are well combined.

  4. 4.Heat Oil

Heat enough vegetable or sunflower oil for deep frying in a pot over medium heat. To check if the oil is ready, dip the handle of a wooden spoon into it; if small bubbles form around the wood, the oil is at the correct temperature.

  5. 5.Fry the Daltjies

Drop spoonfuls of the batter into the hot oil. Fry for approximately 3 minutes, constantly turning the daltjies with a slotted spoon until they are golden brown and cooked through. Adjust heat if necessary to prevent burning.

  6. 6.Drain and Serve

Once golden brown, remove the fried daltjies from the oil using a slotted spoon and place them on paper towels to drain excess oil. Continue frying in batches until all the batter is used. Serve the daltjies hot, optionally with chili sauce or pickled green chilies.
